I have a 1962 Type 1 that I am working on a restomod project for autocross/hillclimbs/Sunday driver. I am wondering if a zero roll resistance setup will work in the sedan. It's a body off restoration with a rollcage to be installed, moving up the luggage compartment shelf isn't a problem to make room for the shock and rockers. Or would I be better off with a z-bar and/or camber compensator?

With the extra weight you'll have to run a very large shock and spring combo. An external roll bar will be required on the front to control roll. There may be some weight distribution issues since the bug is a rear engine car vs mid engine like the vees. Based on your expected use, the standard suspension and camber compensator would be a better choice.
